Yuca Breakfast Hash

Ingredients
- 1 package Yuca (Cassava) Steak Cut
- 6 ounces Diced Onions
- 1 cube Crushed Garlic
- Salt and pepper to taste
- Oil for sauteing
- 2 tablespoons flour
- Shredded cheddar cheese
- Shredded muenster cheese
- 4 eggs
- Butter for frying eggs
- Parsley flakes
Directions
Heat oil in a large frying pan. Add the Yuca Fries and fry until golden brown and crispy. Remove and drain on paper towel. Sauté onions until translucent. Add garlic, salt, and pepper and cook for 2 to 3 minutes. Add flour to mixture.
In a 9x13 pan, spread out a Yuca Fries in one layer. Add the onions and sprinkle with cheeses. Bake on 350 degrees F until cheese is melted, approximately 10 minutes.
Meanwhile, melt butter in a nonstick skillet until it bubbles. Gently pour each egg into the skillet. Cook until yolks have set. Remove from heat.
To assemble, place Yuca Fries onto a plate. Sprinkle with parsley flakes and slide the eggs on top of the Yuca.
