B’gan Yellow Split Peas are earthier in flavor than B’gan Green Split Peas. They don't need to be soaked and cook more quickly than whole peas,  makeing a great addition to soups and sides.

Cooking

Cold soak: Cover beans with at least two inches of water and let stand overnight. Discard water before cooking. Hot Soak (1-6 hours depending on density of beans): Cover beans with water in large pot. Bring to boil. Remove from heat after 2 minutes. Remove from heat and let stand for at least 1 hour, preferably longer. Rinse with cold water and prepare as desired.
