Tri Color Tostones Wraps
Serves 8
Ingredients
- 1 package Tostones – Fried Green Plantains
- 12 ounces Diced Onions
- 3 colors peppers, julienned
- 1 teaspoon salt
- 1 cube Chopped Basil
- 2 cubes Crushed Garlic
- 1 cube Chopped Parsley
- 8 wraps
- Corn flake crumbs
- Eggs for dipping and oil for frying wraps
- Purple cabbage, baby spinach leaves and mashed Baby Lima Beans
Directions
Heat oil in a frying pan over medium heat. Cut Tostones into strips and fry until golden. Remove and drain on paper towels.
In a large pan, sauté onions until translucent. Add peppers and cook for 6 minutes, stirring constantly. Add Tostones, then stir for 1 to 2 minutes. Add salt and spices. Sauté for a few more minutes, then allow to cool.
Place some of the pepper mixture on a wrap. Brush top part of wrap with water. Roll it up and fold in the two sides. Dip wrap into eggs and roll in corn flake crumbs. Fry until golden. Arrange purple cabbage, baby spinach leaves and mashed Baby Lima Beans as garnish. Cut Tostones in half and add to serve. Happy crunching!
