Sweet & Sour Broccoli Meatballs

Ingredients

  • For the Meatballs

  • 1 egg
  • 1 cup breadcrumbs
  • Salt pepper garlic to taste
  • 1 cup Bgan frozen broccoli rice (defrosted and drained)
  • 1 cup Diced Onions (defrosted and drained)
  • 1.5 lb ground beef/chicken mix
  • For the Sauce

  • 1 1/4 cup ketchup
  • 2 cups ginger ale

Directions

Mix together meatball ingredients, Pre heat oven to 400°.
Line a baking sheet with parchment paper. Form meatballs , and place on baking sheet, continue till all meat is used up. Spray with oil, and bake for 20 minutes. While that's cooking, prepare the sauce. In a saucepan, combine the ketchup and ginger ale, and bring to a boil. Turn flame down to a simmer, keep uncovered. Once meatballs are done, add to the sauce and continue cooking till sauce becomes thicker, Approx. 15- 20 mins. Serve with rice, or your favorite Bgan veggies!
