Parmesan Cauliflower Cakes

Ingredients
- 3 cups Cauliflower Florets
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 cubes Crushed Garlic
- ½ cup Diced Onions
- 2 cubes Chopped Parsley
- ½ cup all-purpose flour
- plus additional flour for coating
- ⅓ cup grated parmesan cheese
- 1 egg
- oil for frying
Directions
Microwave Cauliflower Florets for 15 minutes or until tender.
Mash cauliflower, mix in salt, pepper, Crushed Garlic Cubes, Diced Onions, Chopped Parsley, flour, grated parmesan, and the remaining ingredients.
Form the cauliflower into heaping tablespoon size balls. Coat both sides of the cauliflower cakes with flour.
Fry in oil until golden brown and crispy on both sides.
