Mexican Cauliflower with Black Beans & Avocado

Ingredients

  • 1 bag Breaded Cauliflower
  • 3 tablespoons olive oil
  • 1 tablespoon taco seasoning
  • Salt to taste
  • 15 oz. can black beans - drained+rinsed
  • 1 sliced jalapeño pepper
  • 1/2 cup shredded cheddar cheese
  • 1 diced avocado
  • 1 diced tomato
  • 1 chopped scallion
  • Sauce
  • 1/2 cup mayonnaise
  • 1 tablespoon honey
  • Sriracha sauce to taste

Directions

Preheat oven to 420° F. Line a baking sheet with parchment paper.
Lay Breaded Cauliflower on baking sheet. Toss with olive oil, taco seasoning and salt. Spread in a single layer and roast for 25 minutes.
While cauliflower is cooking, whisk together the sauce ingredients.
Remove the cauliflower from the oven and pile them together in the center of the baking sheet. Top with beans, cheese and jalapeño slices. Pop back in the oven to melt the cheese. Remove from the oven and top with avocado, tomatoes, scallions and sauce.
Serve immediately. Enjoy!!
