Meatless Chili Beans
Serves 6
Ingredients
- 1 package Light Red Kidney Beans
- 2 tablespoons extra virgin olive oil
- 4 cubes Crushed Garlic
- 1 cup Diced Onions
- 1/2 green pepper,diced
- 1/2 red pepper,diced
- 1 large carrot,diced
- 1 1/2 ounces diced tomato
- 20 ounces tomato sauce
- 2 teaspoons ground cumin
- 1/8 teaspoon cayenne powder
- Salt and black pepper to taste
- 2 cups water or vegetable broth
- Shredded cheese and chopped nuts for garnish, optional
Directions
Ad Light Red Kidney Beans to boiling water and cook on medium flame for 1 to 2 hours, until soft. Rinse in cold water and set aside.
In a non-stick frying pan, heat the olive oil on medium-high heat. Add Crushed Garlic Cubes and Diced Onions and cook until golden brown. Add diced green pepper, red pepper, carrots, tomatoes, and sauté for about 5 minutes. Next, add tomato sauce, cumin, cayenne powder, salt, and pepper and cook for about 5 minutes. Add cooked Light Red Kidney Beans and water/vegetable broth. Cook over medium heat for 30 minutes, until sauce thickens. Garnish with shredded cheese and chopped nuts, if desired.
