B’gan Lentil Beans are a high-protein, high-fiber member of the legume family. Lentils are also a source of riboflavin, niacin, pantothenic acid, magnesium, zinc, copper, manganese, and selenium. Lentils work well in place of beans or as a vegan protein-filler in meat recipes.

Cooking

Cold soak: Cover beans with at least two inches of water and let stand overnight. Discard water before cooking. Hot Soak (1-6 hours depending on density of beans): Cover beans with water in large pot. Bring to boil. Remove from heat after 2 minutes. Remove from heat and let stand for at least 1 hour, preferably longer. Rinse with cold water and prepare as desired.
