B’gan Green Split Peas are the mature form of green peas. As a result, split peas don’t need to be soaked and cook more quickly than whole peas. Green Peas have a sweeter taste which makes them a star component to a warm and hearty split pea soup.
Cooking
Cold soak: Cover beans with at least two inches of water and let stand overnight. Discard water before cooking. Hot Soak (1-6 hours depending on density of beans): Cover beans with water in large pot. Bring to boil. Remove from heat after 2 minutes. Remove from heat and let stand for at least 1 hour, preferably longer. Rinse with cold water and prepare as desired.
