Four Cheese Breaded Eggplant Parmesan

Ingredients
- 2 packages Breaded Eggplant Cutlets
- 1 package Chopped Spinach
- Canola Oil Cooking Spray
- 8 cups shredded mozzarella cheese, divided
- smoked mozzarella slices
- parmesan and goat cheese, for sprinkling
- 1 jar marinara sauce
Directions
Preheat oven to 350 degrees F.
Spray the baking dish liberally with cooking spray and spread a layer of sauce on the bottom of the dish.
In each of two greased 9x13 baking dishes, begin to layer the B'gan Breaded Eggplant slices; cover with the sliced cheese and add a layer of spinach. Then add a sprinkle of shredded mozzarella cheese. Repeat these layers until there are no remaining eggplant slices.
Liberally sprinkle each dish with parmesan cheese and broken up chunks of goat cheese. Bake the eggplant parmesan for 15 minutes, covered and uncovered for an additional 5 minutes, or until tops of cheese are bubbling and golden brown.
