Cheesy Vegetable Ziti

Ingredients

  • 16 ounces Penne pasta
  • 2/3 cup sugar
  • 2 tablespoons oregano
  • 1 tablespoon garlic powder
  • 3 tablespoons flour
  • 15 ounces tomato sauce
  • 8 ounces Non-dairy Coffee Creamer
  • 1/3 cup water
  • 2 teaspoons salt
  • 1/4 cup oil
  • 8 ounces Diced Onions
  • 1 eggplant, cubed
  • 1 red pepper, diced
  • 1 carton mushrooms, sliced
  • 3 cubes Crushed Garlic
  • 16 ounces Broccoli Florets
  • 2 teaspoons salt
  • Oil for sauteing
  • Shredded cheese

Directions

Cook pasta, then drain and set aside. Mix sugar, oregano, garlic powder, flour, tomato sauce, Coffee Creamer, water, salt and oil in saucepan and bring to a boil. In a separate pan, sauté onions until translucent. Add eggplant and sauté for several minutes. Then add pepper and sauté, stirring occasionally. Finally, add mushrooms and sauté for 2 to 3 minutes. Add Crushed Garlic, salt and broccoli, cook for another 2 minutes. Lower the flame and add the pasta sauce. Stir to combine and cook for 2 minutes. Remove from flame and gently combine the sauce with the pasta. Top with cheese and melt over low flame.
