Cheesy Spinach Quesadilla
Serves 6
Ingredients
- 1 bag Cheesy Spinach Quesadilla
- 2 cups Diced Onions
- 1 small tomato, chopped
- 2 tablespoons Lemon Juice
- 1 teaspoon ground cumin
- 2 cubes Crushed Garlic
- 1 cup shredded cheese blend
- 1/4 cup ricotta cheese
- 6 flour tortillas (6 inches)
- slices of smoked cheese
- Canola Oil Cooking Spray
Directions
Spray a large nonstick skillet with the B'gan cooking spray. Sauté the B'gan onions until their slightly caramelized.
Add the tomato, B'gan lemon juice, cumin, and garlic cubes. Cook for 10 minutes until tomatoes are soft. Remove from heat and stir in the cheeses.
Spread 1/8 cup of the cheesy spinach mixture on half of a flour tortilla. Top with smoked cheese and fold in half. Fry the quesadilla in a skillet over medium heat until the cheese melts and quesadilla is golden brown, 1-2 minutes per side.
