Cheesy Ravioli Salad

Serves 4-6

Ingredients

  • 1 bag Diced Sweet Potato
  • ¼ cup olive oil
  • 2-3 Tablespoons honey
  • Kosher salt and freshly ground pepper to taste
  • 2 boxes defrosted B’gan Pre-Cooked Cheese Ravioli
  • 1 diced avocado
  • ½ cup shelled pistachios
  • ½ cup Balsamic vinaigrette
  • 1 cup shredded mozzarella and cheddar cheese

Directions

Toss sweet potatoes with oil, honey and spices. Roast the sweet potatoes at 450°F until crispy.
Make the cheese crisps: Toast shredded cheese in a greased pan at 450°F until crispy. Watch carefully so it doesn't burn. Cool and break into pieces.
Combine salad ingredients and place in serving dish. Drizzle with balsamic vinaigrette. Top with cheese crisps.
