Ceviche Tostones
Serves 8
Ingredients
- 1 package Tostones – Fried Green Plantains
- 1 pound firm-flesh fish such as tilapia, cubed
- Lemon Juice
- Juice of 3 limes
- 1 teaspoon salt
- 1 small jalapeno, finely-diced
- 1 red pepper, finely-diced
- Small purple onion, finely-diced
- 2 cubes Chopped Cilantro
- Squirt of Tomato Ketchup
- 1 avocado
- 1 cube Crushed Garlic
- 1 teaspoon onion powder
- Juice of 1 lime
- Salt and garlic powder to taste
Directions
Cover fish in lemon juice and let sit for ten minutes to get rid of fishy taste, then pat dry. Add the rest of the Ceviche ingredients: lime juice, salt, jalapeno and red peppers, purple onion, Cilantro Cubes and ketchup.
Marinate for about 2 hours in the fridge. Blend avocado, Garlic Cube, onion powder and lime juice, then set aside. Fry Tostones according to package directions. Sprinkle with salt and garlic powder while still hot.
Serve Ceviche on top of freshly-fried Tostones and top with whipped avocado.
