Broccoli Curried Chicken

Ingredients

  • 1 package Diced Onions
  • 4 cubes Crushed Garlic
  • 2 tablespoons olive oil
  • 5 chicken thighs
  • 1 1/2 cups long-grain white rice
  • 1 package Broccoli Florets
  • 1 package Green Zucchini
  • 1 1/2 cups chicken stock, warmed
  • 1 1/4 cups hot water
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon salt
  • Dash of black pepper

Directions

Preheat oven to 350 degrees. Scatter onions and garlic cubes in baking dish. Add olive oil in the center. Bake for 15 minutes, until lightly browned. Meanwhile, mix remaining ingredients for chicken rub and sprinkle on both sides of the chicken. Remove baking dish from the oven. Add rice and mix. Place chicken on rice with broccoli and zucchini. Then pour chicken stock and water around the chicken. Cover with foil and bake for 35 minutes. Remove foil and bake uncovered for additional 15 minutes. Remove from oven and let stand for 5 minutes, then remove chicken and fluff up rice. Garnish with green onions before serving.
