Quick n’ Easy Tortellini Soup
Ingredients
- 2 tablespoons unsalted butter
- 1 cup Diced Onions
- 2 cubes Crushed Garlic
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon balsamic vinegar
- 4 cups vegetable broth
- 1 (28-ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 2 bay leaves
- 1 package Pre-Cooked Tri Color Tortellini
- Grated or shredded Parmesan cheese for garnish (optional)
Directions
In a large pot, melt butter over medium heat.
Add the onion, garlic, salt, and pepper and cook, stirring occasionally, until tender, about 6 minutes.
Stir in the balsamic vinegar. Next, add the crushed tomatoes, vegetable broth, heavy cream, and bay leaves, and bring to a boil. Reduce heat, and simmer for 7 minutes.
Add the tortellini and simmer for 3 more minutes. Remove from the heat, and discard the bay leaves.
Ladle into bowls and top with Parmesan cheese, if desired.
