Creamy white in color, B’gan Pea (Navy) Beans are small, pea-sized beans that are mild in flavor with a dense, smooth texture. Because of their versatility and high protein content, navy beans have been a staple form of sustenance in the United States Navy. Hence they were deemed "navy" beans.
Cooking
Cold soak: Cover beans with at least two inches of water and let stand overnight. Discard water before cooking. Hot Soak (1-6 hours depending on density of beans): Cover beans with water in large pot. Bring to boil. Remove from heat after 2 minutes. Remove from heat and let stand for at least 1 hour, preferably longer. Rinse with cold water and prepare as desired.
