Hearty Veggie Soup

Ingredients
- 1 tablespoon olive oil
- 4 ounces Diced Onions
- 3 cubes Crushed Garlic
- 1 package Mixed Vegetables
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1/2 teaspoon salt
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 bay leaf
- 8 cups water and 2 vegetable bouillon cubes or 8 cups vegetable broth
- 1 14-ounce can diced tomatoes
Directions
Heat oil in large soup pot. Add B'gan Diced Onions, B'gan Garlic Cube, B'gan Steam-N-Serve Mixed Vegetables, carrots and celery. Heat for 5 minutes, stirring constantly until onions are soft. Combine salt, thyme, and oregano and pour over vegetables, stirring well. Add bay leaf and water or vegetable broth, then bring to a simmer. Stir in tomatoes and simmer until all the vegetables are cooked, about 8-12 minutes. Remove bay leaf and enjoy.
